Founders of the Wrenkh Vienna Culinary School, Leo and Karl were born into a kitchen culture – their father Christian having opened Austria’s first haute vegetarian restaurant in 1982. For Avalon, the brothers have developed an inventive menu of dishes that celebrate regional traditions and honour our relationship with what’s in season, what grows locally in each destination and how best to showcase the quality of these ingredients. So whether it’s a vanilla-marinated apple and raisin aperitif, drizzled with pistachios; or a sage-sautéed spinach gnocchi served with fried beetroot; look out for their imaginative creations alongside our own seasonal gourmet dishes.
